As travel bloggers, we don’t usually write about recipes or make up recipes and blog about them. I decided that I had to share my creation of these delicious Sunflower Power Balls. There are hundreds of energy bite recipes online and this one is specific to my tastes.
These power balls are easy to make and are excellent for day hikes. They won’t travel well for long periods of time, so keep these on the trails close to home.
I have an allergy to peanuts, so this is why I use sunflower butter instead of peanut butter. Another option is cashew butter, although it tends to be more expensive.
These Sunflower Power Balls would be delicious with dried cherries and chopped cashews, as well.

Sunflower Power Balls
16 ounces Once Again Organic Sunflower Seed Butter
12 ounces Semi-sweet chocolate chips
2 cups Quaker Oats, old fashioned
1 cup Go Raw Sprouted sunflower seeds
1/2 cup Honey
Prep : 10 minutes
Makes: approx. 52 bites
Ready in: 1 hour 15 minutes
Instructions: Combine sunflower butter, oats, seeds, chocolate chips and sunflower seeds in a bowl. Hand stir or mix with Kitchen Aid on low setting. Form into bite size balls, and place on non-stick parchment paper on a cookie sheet. Freeze for at least one hour.
